Summer is over…

But don’t give up the summer flavours (just yet!)

You know those days when you just want to make something and you get all excited about it, then you look in the cupboard/fridge and realise you don’t necessarily have all of the ingredients required? Well, I developed this zingy, citrus-y bliss ball out of the few ingredients I had on hand (because sometimes having to go outside and into the supermarket/local store is just waaay too hard).

The result is a yummy, tangy, summery mouthful of, well, bliss!

Citrus Tahini Bliss Balls

Ingredients:

1 cup almond meal

1/2 cup tahini (you can use hulled or unhulled – whatever you prefer)

1/3 cup rice malt syrup (swap for maple syrup or coconut nectar if you like)

1 + 1/2 cups shredded coconut, plus extra for coating

1 tsp maca powder (I use Loving Earth)

Juice of 2 limes, zest of one (you could use the zest of both for an extra lime-y flavour!)

Juice of half a lemon

Pinch of Himalayan sea salt

1 tsp pure vanilla extract, optional

Method:

Pop all ingredients (except for the extra coconut) into a food processor and whiz away until the mixture combines well and comes together. You may need to scrape down the sides of the bowl once or twice.

With damp hands, roll tablespoon-sized scoops of the mixture into balls, tossing them in the extra shredded coconut as you go.

These taste the best once chilled for a few hours but if you can’t wait that long, room temperature is totally fine!

Place onto a tray or into an airtight container and store in the fridge for up to a week.

Makes approximately 14 large-ish bliss balls.
